Vanilla Cake

I normally bake only one cake a year – for Christmas. But this year, everyone in my home were excited about baking cakes. And specifically asked me for the recipe of a cake with frosting. So, I picked a recipe from the website of The Jaroudi Family. By no means is this my original recipe. I wasn’t planning on posting this recipe for two reasons. Firstly, because it is not my original recipe and I only made a very minor modification to the original recipe. Secondly, because the photographs are not that great. But I keep getting requests for this recipe. So, I decided to go ahead inspite of all my reservations. This cake was a surprise gift from Hari to me. Other than reading out the recipe, I had no involvement in its preparation. So, I was really touched when this cake was presented to me for the New Year.

Vanilla Cake

Ingredients
1 1/2 cups whole wheat flour
2/3 cup oat flour
1/2 tsp baking soda
1 tsp baking powder
1/2 cup coconut milk
1/2 tsp apple cider vinegar
1″ piece of vanilla pod (see pic)
3/4 cup date paste (use more if you want it sweeter)
1/2 cup applesauce
For The Frosting
1 1/2 cups cooked sweet potatoes
2 pitted dates
1/2 cup raw cashews
1″ piece of vanilla pod
1/2 cup coconut milk
Method (For The Cake)
In a mixing bowl, add the dry ingredients – wheat flour, oats flour, baking soda, baking powder and vanilla pod
Mix well
Set aside
In a small bowl, add the coconut milk and apple cider vinegar
Set aside for about 5 minutes
Add date paste and applesauce to the dry ingredients
Add the coconut milk and apple cider vinegar mixture to the dry ingredints
Mix well till all the ingredients are combined well
Spread the batter into a 9″ round baking pan
Bake at 175o C for 30 minutes (apply the toothpick test to check if the cake is done)
Let the cake cool completely before removing from the pan
Method (For The Frosting)
Add all the ingredients to a blender
Blend till smooth
If the frosting is not sweet enough, add a couple more pitted dates
The consistency of the frosting should be thick
Place the frosting in the refrigerator for about 30 minutes
Method (Putting It Together)
Apply the frosting on the cake
Decorate with your favourite fruits, if desired
Serve
