Asparagus in not native to India. I find it in the market often, but priced really high. But I have come to like the taste of asparagus. I therefore buy it every once in a while. It normally goes into a salad with baby carrots. But this time, I was having a rollicking good time experimenting with soups. And therefore decided to try out an asparagus soup – now, I am left with a bunch of baby carrots and wondering what to do with them. Nevertheless, the soup was really worth it. And therefore more reason than ever to buy this expensive vegetable even more often. I must thank feel good foodie for pointing me the way to this wonderful soup.

Ingredients
1 onion, chopped
2 cloves garlic, minced
900 gms of asparagus, ends trimmed and chopped
2 medium potatoes
4 cups water (or vegetable stock)
2 cups coconut milk
Salt and pepper to taste
Juice of 1 lemon
Method
Coat the asparagus with pepper and salt
Transfer to the air fryer and ‘fry’ for about 10 minutes, shaking the bowl once or twice in-between
Heat a heavy bottomed and add the onion and garlic
Cook till the onion is translucent – sprinkle a little water, if necessary
Add the potatoes, pepper and salt
Cook for about 5 minutes
Add the coconut milk and water (or stock)
Bring to a boil
Reduce flame to sim and continue to cook till the potatoes are tender
Add the roasted asparagus
Transfer to a blender
Blend till smooth and creamy
Stir in the lemon juice
Serve hot
