Poondu thokku is a traditional South Indian garlic relish that brings together the deep, earthy flavour of roasted garlic with the warmth of red chillies and the gentle tang of tamarind. A little of this intensely flavoured thokku goes a long way, making it a much-loved accompaniment to simple everyday meals of rice, idli, dosa or even Indian flatbreads. In many Tamil homes, garlic has long been valued not only for its distinctive flavour but also as an ingredient associated with traditional household cooking and nourishment. The slow cooking of garlic transforms its sharp, raw character into something mellow, rich and almost sweet, while spices add warmth and depth. Traditionally prepared with oil, this version can be made without oil, allowing the natural flavours of garlic, spices and tamarind to shine. Its concentrated flavour makes poondu thokku especially satisfying alongside plain rice and a simple vegetable dish, turning an uncomplicated meal into something wonderfully aromatic and comforting. It is a fine example of how traditional South Indian cuisine often creates remarkably bold flavours from a handful of humble ingredients.

Ingredients
1 cup peeled garlic cloves
8-10 dried chilies (adjust to taste)
1 1/2 tbsp tamarind pulp
1/2 tsp mustard seeds (sarson, kadugu)
1/4 tsp fenugreek seeds (methi dhana, venthiyam)
1/2 tsp cumin seeds (sabut jeera. jeeragam)
1/4 tsp turmeric powder (haldi, manjal podi)
1/2 tsp unrefined salt
1/2-3/4 cup water
Method
Soak the dried chilies in warm water for 10-15 minutes
Drain
Grind the garlic, chilies, tamarind, cumin and fenugreek seeds with a little to make a fairly smooth, thick paste
Heat a heavy bottomed pan
Add the mustard seeds
When they begin to splutter, add 2 tbsp of water
Add the ground garlic mixture and turmeric
Cover and cook over a low flame, stirring frequently
Add a little water as necessary to prevent sticking
Continue cooking till the raw smell disappears and the thokku becomes thick and glossy
Add salt and cook for another 5-7 minutes, stirring often
The finished thokku must be thick enough to hold its shape
Switch off flame and cool completely
Transfer to a clean, dry glass container
Serve a small spoonful with hot rice, idli, dosa or Indian flatbreads
