Mixed Vegetable Curry

I try to make flavoured rice about once a week. The only issue that I face is that the meal does not contain enough vegetables. The rice is just rice with some flavouring like lime, sesame, coconut or some such. I am therefore constantly on the lookout for a vegetable curry with loads of several kinds of vegetables. This is one such recipe to pair with the rice.


Ingredients
1 tsp cumin seeds
1/2 cup finely chopped onions
1 tsp ginger-garlic paste
1 cup finely chopped tomatoes
1/2 tsp turmeric powder
1/2 tsp paprika (adjust according to taste)
2 tsp coriander powder
1/2 tsp garam masala
1 green chili, chopped
1/2 cup chopped potatoes
1/2 cup chopped green bell pepper
1/2 cup chopped carrots
1/2 cup chopped French beans
1 cup chopped cauliflower
1/2 cup green peas
1 1/2 cups water (more, if necessary)
Unrefined salt to taste
10 tofu cubes
3 tbsp chopped coriander leaves
Method
Heat a wok and add cumin seeds
When they begin to splutter, add the onions
Sauté till the onions are golden brown
Add ginger-garlic paste and saute for 10-12 seconds or till the raw smell evaporates
Add the tomatoes and saute till they become mushy
Sprinkle a little water, if necessary
When the mixture becomes smooth, add the chili, turmeric, coriander and garam masala powders
Mix well and saute for a minute
Add chopped vegetables, green peas and green chili
Add water and salt
Mix well
Cover and cook on low heat
Stir occasionally
Continue to cook till the vegetables are tender
Switch off the flame and garnish with tofu and coriander leaves
Serve hot or warm with Indian breads
