Hot And Sour Soup

This recipe, from Tarla Dalal, is one of the street foods of Mumbai. If, like me, you are a fan of tangy foods, then this is definitely for you. I grew up in a traditional South Indian household, where many dishes contain tamarind. If fact, quite a few of them have tamarind as a base. I am therefore almost an addict of sour tasting food. This soup recipe does satisfy all my craving for sour food. I was a little sceptical as the recipe contained no tamarind. Having prepared it, however, I had no regrets whatsoever; in fact, I really enjoyed this soup and can well understand why it has acquired enough fans to become street food. Go ahead and try it – you will not regret it.

Hot & Sour Soup

Ingredients
1/2 cup thinly shredded cabbage
1/2 cup grated carrot
1/2 cup chopped cauliflower
1/2 cup finely chopped spring onion
1 tbsp finely chopped garlic
2 tsp finely chopped green chilis
1 tbsp red chili sauce
1 tbsp soy sauce
1 1/2 tbsp vinegar
3 tbsp cornflour dissolved in 1/2 cup water (I used brown rice flour)
Salt and freshly ground pepper to taste
Method
Heat a wok and add garlic and green chilis
Sauté on high flame for a few seconds
Add the cabbage, carrot, cauliflower and spring onion
Continue to sauté for another 2 minutes
Add the chili sauce, soy sauce and vinegar
Mix well and cook on medium flame for 1 minute
Add 4 cups of water, cornflour mixture, salt and pepper
Mix well
Bring to a boil, stirring occasionally
Switch off flame and serve immediately
