Quick Vegetable Soup

Yet another soup. This one is so simple that even a child can put it together. From the prolific and iconic Tarla Dalal, bless her. If you are in the mood for something hot (temperature, not chili) and not in a mood to spend a large amount of time in the kitchen, then this soup is for you. Barring a prep time of 15 minutes (basically chopping vegetables), it is a breeze. I know of several busy people who prep in advance. Then this soup takes only 5 minutes. But none of that takes away an iota of taste. I really enjoyed this clear soup with oodles of vegetables. And you can customise that vegetables that you want to use.

Quick Vegetable Soup

Ingredients
1/2 cup thinly sliced onions
1/2 cup thinly sliced potatoes
1/2 cup thinly sliced tomatoes
1/4 cup thinly sliced carrots
1/4 cup thinly sliced bottle gourd
1 tbsp finely chopped celery
4 black pepper corns
Salt to taste
2 tbsp finely chopped coriander leaves to garnish
Method
Combine all the ingredients in a pressure cooker
Add 3 1/2 cups of water
Mix well
Cook for 1 whistle
Let the steam release before opening the lid
Serve hot garnished with coriander leaves
Enjoy!
