Green Bell Pepper Soup

Bell peppers are called capsicum in India. I shall therefore keep this post to Indian terminology. In my eagerness to try new recipes, I began experimenting with several soups. Most of them turned out really well. More because Hari is a very talented chef rather than any contribution of mine. This is one such soup that made me reach out for a second helping. I could not believe that the humble capsicum could me transformed so magically into a delicious soup. And it is not as though there were several spices that enhanced the taste. The list of ingredients is very short; the preparation very easy.

Capsicum Soup

1 green capsicum, de-seeded and chopped
1 onion, chopped
4 cloves garlic, chopped
1 tsp black pepper powder
Salt to taste
1 /2 cups water
Heat a wok and add onion, garlic and black pepper
Sauté for about a couple of minutes
Set aside
Heat a pan and add about 3/4 to the capsicum
Sauté till it turns soft
Transfer the onion/garlic/black pepper mixture and the sautéed capsicum to a blender
Add 1/2 cup water
Blend till smooth
Set aside
Add the remaining capsicum to the pan
Sauté for about 2 minutes
Add the puree and 1 cup of water
Boil for about 5 minutes
Serve hot
