It seems that I have travelled all over Europe in search of my salad recipes! I do post Indian salad recipes. But the recipes from various other countries are also very interesting and tasty. The only issue is that the ingredients may not always be available. I then have to find the closest substitute. In many cases, some of the most important ingredients are either not available or not in season. I then take a call and do not attempt them. However, if the substitution is only minor, I just go ahead. And in 100% of cases, the net outocome has been nothing short of spectacular. This Spanish salad (ensaladilla rusa) was quite easy as all the ingredients were easily available. More importantly, I had the huge satisfaction of including a lot of healthy greens in the salad.

Ingredients
4 potatoes, cubed (I did not use potatoes as I am currently on a minimal potato diet)
3 carrots, cubed
100 gms French beans, cut into small pieces
1 lettuce
1/4 cup chopped celery
1/2 cup chopped basil
1/2 cup chopped parsley
1 cup vegan mayonnaise (see recipe in this blog under “Chutneys & Powders:)
6 green olives, halved
Salt and pepper to taste
Method
Steam the potatoes, carrot and green beans
Set aside
Wash all the greens well
Tear, roughly, the lettuce
Transfer all the vegetables and greens into a bowl
Add mayonnaise, salt and pepper
Mix and toss well
Garnish with olives
Serve immediately or chilled
