My journey with salads continues. I have tried so many, all with great success, that I have forgotten the recipes for most of them. Thank God that I am documenting them in this blog. Needless to say, salads are super healthy and needs to be a part of every meal. I suspect that many Indians have the notion that salads are boring. I too thought so until my experiments began – and so did a love affair. This salad contains the same ingredients that are normally served as a salad in most Indian homes – cucumbers and tomatoes. It is just the addition of some peanuts and a simple dressing that lifts this salad to the heavens.

Ingredients
31/2 cups cucumber cut into 1″ strips
1 cup tomatoes, cut into segments
4 tbsp peanuts, coarsely crushed
For The Dressing
6 garlic cloves
4 green chilis, chopped
1 tbsp lemon juice
2 tsp soy sauce
2 tbsp date paste
To Garnish
1 tbsp peanuts, coarsely crushed
Method
Add lemon juice, soy sauce and date paste to a bowl
Pound the garlic cloves and green chilis in a pestle/mortar
Add this to the lime juice/soy sauce/date paste mixture
Mix well
Put the cucumbers and tomatoes into a bowl
Pour the dressing over the vegetables
Toss well
Add the crushed peanuts, toss and refrigerate
Add the remaining 1 tbsp of peanuts at the time of serving
