In days of yore, when I used to travel to at least 2 countries every week, I had occasion to sample dishes from each of these countries. I was always vegetarian, though not vegan in those days. It is only in the past decade that I have adopted a vegan and WFPB diet and lifestyle. One of the dishes that I have always liked is the Thai raw papaya salad. I tried replicating a WFPB version of it – but the result was nowhere close. However, my experiment was not a complete waste. It tasted delicious and I make this salad regularly. So, here is my version of a raw papaya salad.

Ingredients
150 gms raw papaya, grated
1 medium sized carrot, grated
1 tomato, chopped fine
25 gms French beans, sliced fine
1 green chili, chopped fine
2 tbsp lime juice
2 tbsp peanuts, roasted
1/2 tsp dark soy sauce
Salt to taste
Method
Transfer everything, except peanuts, into a mortar
Crush with a pestle
Add the roasted peanuts
Mix well
Transfer to a salad bowl and serve
