Kale is a new green for me. I have seen it around for many years, but was never tempted to try. This winter, my farmer friend, Adarsh Singh Tawar, sent me several saplings. Kale was one among them. And they grew beautifully in my garden. But I was foxed about what to do with this green. So, Hari and I decided to be adventurous and try out a salad. The end result was indeed satisfying. Several people have requested me for the recipe. So, here goes!

Ingredients
200 gms kale leaves, chopped fine
4 cloves garlic (adjust according to taste)
1″ piece ginger, grated
1 tsp mustard paste
3 tbsp coriander leaves, chopped fine
1 green chilli, chopped fine
Juice of two limes
1/2 tsp freshly crushed black pepper
1/2 tsp garam masala
Method
Add the ginger, garlic and green chilli to a bowl
Crush with a fork till it becomes a paste
Add the mustard paste, lime juice and coriander leaves
Combine well
Add the kale leaves and mix so that it is evenly coated with the dressing
Add black pepper and garam masala
Allow it to sit for an hour – or serve immediately
