Stuffed Portobello Mushrooms

I am not a great fan of mushrooms. But when I visited the organic market and saw these exotic portobello mushrooms, I was really tempted to buy them – which is exactly what I did. I must admit that this is the first time that I have bought these mushrooms. So, I had to google to discover how one acutally prepares these for consumption. Hari was of course familiar with portobello mushrooms and wanted to make them as a dish to be had at lunch or dinner. But I was keen to explore other methods. And was thrilled to discover that you could actually stuff these. So, stuffed mushrooms, it was!

Portobello Mushrooms

Ingredients
200 gms portobello mushrooms
1 big potato, boiled
1 green chilli, chopped fine
1 medium sized onion, chopped fine
25 gms vegan mozzarella cheese
Salt to taste
Method
Remove the stems of the mushrooms and wipe them clean
Heat a wok and add onions
Saute for a minute
Add green chilli
Mash the potato and add to the wok
Add the cheese, salt
Remove from flame
Stuff the mushrooms with this masala
Transfer to the air fryer and ‘fry’ for 10 minutes
Remove to a serving bowl
Serve immediately
