Apple, Banana & Date Salad

I often have a variety of fruits in a single helping. Especially since I went WFPB. But seriously, I have never considered adding a dressing to the fruits. Not until I read this recipe from the iconic Tarla Dalal. I must say that it was the dressing that lifted this salad to new heights. It set me thinking that I should do this often with fruits – meaning add a dressing to a bowl of fruits. Meanwhile, let me present this recipe so that you can enjoy a delicious dish. I did not have dates on hand when I made this salad – I therefore substituted dates with raisins. But I am sure that dates would have tasted better,

Apple, Banana & Date (?) Salad

Ingredients
2 cups apples, cubed
1/2 cup bananas, sliced
1/4 cup dates, chopped (I used raisins)
For The Dressing
1/4 cup pineapple juice (since WFPB does not support juicing, I just crushed the pineapple)
1/4 tsp lemon rind
1/2 tsp lemon juice
1/4 tsp mustard powder
1 tsp date paste
A pinch of salt
Method
Combine all the ingredients in a deep bowl
Toss well
Serve immediately
Enjoy!
