Humans are creatures of habit, I am convinced. Especially when it comes to food. We all crave something new – but the craving lasts only till it is satisfied. We invariably revert to comfort (often dishes that we have grown up with). So it is for me too. Whenever I visit the market to buy vegetables, I am often tempted to buy the ‘healthier’ vegetables – purple cabbage, red radish, sweet potato… But, most of the time, I end up buying what I had always bought. And, therefore, the dishes prepared with these vegetables are also invariably the same. I once bought purple cabbage – in a burst of self-righteousness. And then did not know what to do with it. I will not face the same situation now as the following recipe is finger-licking good.

Ingredients
1/2 cup purple cabbage
1 small carrot
1 large onion
2 tbsp sweet corn kernels
1 tomato
1 tbsp chopped coriander leaves
1 tsp lemon juice
Salt and pepper as needed
Method
Wash and cut all the vegetables into thin, long strips
Set aside
Mix salt, pepper and lemon juice in a bowl
Add the chopped vegetables and mix well
Serve immediately
