The concept of salads in India is very different from the popular notion. Most states in India have a kind of salad, but it is invariably yogurt based. Called raita in North Indian and many other parts of the country. Pachadi in several parts of South India. There are some non-yogurt based salads – like the kosumalli of South India. The state of Maharashtra is an exception with a fairly large variety of non-yogurt salads called koshimbir. The simple recipe presented here is one such example. Very easy to prepare. And outstanding taste. Possibly one of the best salads that I have tasted.

Ingredients
1/2 cup onions, chopped
1 1/4 cup tomatoes, chopped
2 tbsp finely chopped coriander leaves
Salt to taste
For The Dressing
1/2 tsp mustard seeds (sarson, kadugu)
1/4 tsp asafoetida (hing, perunkayam)
1 1/2 tsp roughly chopped green chillies
Method
Combine the onions, tomatoes and coriander leaves in a bowl
Mix well and set aside
Heat a wok and add mustard seeds
When they begin to splutter, add the asafoetida and green chillies
Sauté for a few seconds
Pour the tempering over the onion tomato mixture
Mix well
Serve immediately
