My journey for burger buns started with Hari’s outstanding potato burger. He often makes this whenever he bakes a normal whole wheat loaf. It was then that I thought that it would be great to have the burger with a proper bun. My search for a WFPB burger bun on the internet yielded no great results. But I did find several vegan burger bun recipes. Left with no choice, I set about modifying these recipes to conform to my food principles. With limited success. Till I came across a site called nutritiously.com. I adapted the recipe with minor modifications. And explained the recipe to Hari. The superb Masterchef that he is, he got it right the first time.
The chocolaty colour that you see is not because the buns are burnt, but the effect of the apple sauce in the recipe. Several friends have expressed an interest in knowing this recipe. So, here goes!

Ingredients
2 cups whole wheat flour
1 tsp baking powder
2 tsp baking soda
1/3 cup coconut milk
3 tbsp vegan curd
Salt to taste
1/3 cup warm water
3 tbsp apple sauce
1 tbsp lime juice
Grains and nuts of your choice to spread on the buns
Method
Pre-heat oven to 200 degrees C for 10 minutes
Line a baking tray with parchment paper
Sieve the wheat flour into a bowl
Add salt, baking powder, baking soda, coconut milk, lime juice and vegan curd
Mix well and knead into a soft dough
Divide into 6 pieces
Shape into buns
Place on the baking tray at least 2″ apart
Brush the apple sauce on the tops of the buns
Sprinkle nuts and grains of your choice on the buns
Bake for 30 minutes or till done (when you insert a toothpick, it should come out clean)
Cool on the rack
Server with your favourite form of burger and whatever else takes your fancy
