Sesame Soba Noodles

I have been out of stock of noodles for some months now. I was therefore really delighted to visit the shop a couple of weeks ago and pick up my stock. I wanted to try something different with the soba noodles, but the challenge was that many ingredients arHoe not readily available. I therefore decided to use whatever I have at home – and, as a result, some pretty big deviations from the recipe as presented in the website Damn Delicious. I will give both the original version and my deviations in brackets. However, I am glad that I made the attempt as the end result was indeed delicious!

Ingredients
230 gms soba noodles
1/4 cup rice wine vinegar (I used white vinegar)
2 tbsp soy sauce
1 tbsp date paste
1 clove garlic, pressed
1 tsp grated ginger
2 green onions, sliced thin (I used a capsicum, French beans and some purslane instead)
2 tbsp cilantro leaves, chopped (I used coriander leaves)
1 tsp white sesame seeds


Sesame Soba Noodles

Method
Steam the capsicum, French beans and purslane
Set aside
Cook the soba noodles according to the instructions on the pack
Rinse under cold water, drain and set aside
In a small bowl, whisk together the vinegar, soy sauce, date paste, ginger and garlic
In a large bowl, combine the noodles, vinegar mixture, steamed vegetables, coriander leaves and sesame seeds
Check and adjust salt
Mix well
Serve immediately
Enjoy!
