Pazham Pori is a very popular snack from Kerala. Much like the Pisang Goreng from the countries of South-East Asia, this is a superbly tasty snack. It is made using ethakka (the giant sized bananas available widely in Kerala. I, however, used the small, sweet bananas (grown in my brother’s garden in Kochi) and it tasted out of this world! Use any variety of banana that is available – the results will be outstanding.
Ingredients
3 ripe bananas
1 cup whole wheat flour
1 tbsp rice flour (I used brown rice flour)
1 tbsp date paste
3/4 cup water
A pinch of turmeric powder (haldi, manjal podi)
Salt to taste
Method
Peel the bananas and slit it lengthwise
Set aside
In a bowl, add the wheat flour, rice flour, date paste, turmeric powder and salt
Blend into a smooth paste, adding water a little at a time so that no lumps are formed
Dip the sliced bananas in this batter and transfer to a steamer
Repeat for the remaining banana slices
Steam for 2 minutes
Transfer to the air fryer
‘Fry’ for 10 minutes or till the fritters turn golden brown (ensure that you flip the pieces so that all sides are evenly browned
Serve hot with your favourite cuppa
