Raw Papaya Soup

Frankly, I am not much of a soup person. But, once in a while, I have the urge to have a soup. Once, when I when I was running a temperature, I had the irresistible urge to have a soup. Nothing else. My doctor absolutely forbade it, saying I must have some carbohydrates. I came home and had a soup – and was fully recovered the next day. This raw papaya soup is entirely Hari’s creation. And easily one of the best soups I’ve had!

Ingredients
2 cups of peeled, 1″ cubed raw papaya
1 tsp cashew butter
1 tsp vegan cashew cheese
1″ piece ginger, grated
1 tsp cumin seeds bound in a muslin cloth (potli)
Salt to taste
4 cups water
Method
Put all ingredients into a pressure cooker
Cook for 1 whistle
Let steam release naturally and open lid
Remove the muslin cloth with the cumin seeds
Transfer to a blender and blend
Transfer to a vessel and boil for a couple of minutes
If too thick, add a little water
Transfer to a serving bowl
Garnish with freshly grated pepper
Serve hot
Enjoy!
