After all the binge eating during Diwali, it is time again for some healthy recipes. And what better than a good salad? Especially as winter has set in early and the market will soon be filled with fresh and wonderful vegetables. The salad today is normally served with Parsi dhansak (please refer section on main dishes for recipe) and browned rice. Though very simple, it is indeed a tasty salad that can be paired with almost all dishes. Do give it a try.
Ingredients
1/2 cup cucumber, chopped fine
2/3 cup onion, chopped fine
1/2 cup tomato, chopped fine
1-2 green chillies, minced fine
A handful of coriander leaves, chopped fine
2 tbsp cider vinegar
1/4 tsp pepper powder
Salt to taste
Method
Take a large bowl and add all the vegetables
Add the green chillies
Add the coriander leaves, vinegar, salt and pepper
Toss well till everything is combined
Cover and set aside for 2 hours (longer, if using a refrigerator)
Serve with dhansak and browned rice or any other meal
