Sprouts (moth, mulai) is often used to make a salad in India. Theses sprouts are easily available in the market in Delhi/NCR. I used to buy them regularly. In recent times, however, I make my own sprouts at home. For two reasons – because I am not sure of the quality of the store bought ones and they are really easy to make at home. If you do not have a sprout maker, please invest in one. They come in real handy, I love this sprout salad and serve it quite often,
Ingredients
1/2 cup whole green lentil (sabut moong, pachai payaru)
1 small cucumber, chopped fine
1 medium sized tomato, chopped fine
1 green chilli, chopped fine
Juice of 1/2 a lemon
1 small onion
Salt to taste
1/4 tsp black pepper powder (kali mirch powder, kurumilagu podi)
Method
Soak the lentil for at least a day
Drain the water and transfer to a sprout maker
Rest for a couple of days till they have sprouted
Remove from sprout maker and transfer to a wok
Add onion
Saute on medium flame for 5 minutes
Transfer to a salad bowl
Add all other ingredients (except lime juice and black pepper powder) and mix well
Add lime juice
Add pepper powder
Mix well
Serve at room temperature
