I love drumsticks. I buy this every week when my tree is not fruiting. The moment I bring home drumsticks, Hari promptly makes a sambar. I’ve had so much drumstick sambar that I am really sick of it. Therefore, Hari and I explored some other drumstick curries that will be a treat to the palate. This recipe from Andhra Pradesh fits the bill perfectly!
Ingredients
3 drumsticks, cut into 2″ pieces
4 medium sized onions, chopped fine
2 medium sized potatoes, diced
2 large tomatoes, chopped fine
2 green chillies, slit
1/2 tsp red chilli powder
1 sprig curry leaves
1/2 tsp mustard seeds
1/2 tsp cumin seeds (jeera, jeeragam)
1/4 tsp turmeric powder
Salt to taste
1 tsp coriander powder (dhania powderd, kothamalli powder) (optional)
1/2 tsp garam masala (optional)
Method
Wash and cut the drumsticks into 2″ pieces
Dice the potatoes and store in a bowl of water, till needed
Heat a wok and and mustard and cumin seeds
When they start spluttering, add curry leaves and onions
Saute till onions turn translucent
Add drumsticks and potatoes
Saute for 2-3 minutes (sprinkle a little water if necessary)
Add tomatoes, salt and turmeric powder
Continue cooking till tomatoes are mushy
Add red chilli powder and continue to cook for another 2-3 minutes
Pour enough water to just cover the drumsticks
Cover and cook till all vegetables are tender
Remove from flame
Serve hot with red or brown rice
