Maharashtra Chilli Garlic Chutney

I normally have a cooked breakfast like idli (split black gram and rice dumpling) or dosa (split black gram and rice crepe) at least twice a week. Both these dishes are bland. I therefore like a spicy chutney or sambar (lentil soup) as an accompaniment. Many people prefer the bland coconut chutney to go with these dishes. I am not, however, a great fan of coconut chutney unless it is an accompaniment to a spicy snack. For those of you who are not fans of spicy food, you can adjust the ingredients to suit your palette.

Ingredients
10 dried red chillies
6 flakes of garlic, peeled
5 tsp cumin seeds
5 tsp coriander seeds
1/4 cup Bengal gram
Salt to taste

Method
Roast each of the ingredients (except salt) separately
Transfer everything to a blender
Add salt
Grind to a fine powder
Store in an air-tight jar
Whenever required, take a small quantity and mix with water
Serve with idli or dosa
Enjoy!
