Ingredients
1 cup thick yoghurt
1/8 cup ginger, finely chopped
2 long green chillies, finely chopped
2 small dried red chillies, halved
Unrefined salt to taste
1/2 tsp mustard seeds (sarson, kadugu)
1 sprig curry leaves
Method
Take the yogurt in a bowl
Whisk until creamy and smooth
Set aside
Heat a wok and add mustard seeds
When the mustard seeds begin to splutter, add the red chillies
Add the green chillies and ginger
Saute on low flame till ginger is golden brown
Add salt and give a quick mix
Switch off flame
Add this to the yogurt
Mix well
Serve with red/brown/millet rice
Or make it part of a festive meal
