Ingredients
3 cups red pumpkin, cubed
1/2 tsp mustard seeds (sarson, kadugu)
1/2 tsp fenugreek seeds (methi dhana, venthiyam)
1/2 tsp nigella seeds (kalonji, karun jeeragam)
2 cloves (laung, kirambu)
1 green cardamom (elaichi, elakkai)
1 small stick cinnamon (dalchini, lavangathu pattai)
1 bay leaf (tej patta, brinji elai)
A pinch of asafoetida (hing, perunkayam)
1/4 cup finely chopped tomatoes
1 tsp chili powder
1 tsp coriander-cumin (dhania-jeera, kothamalli-jeeraga) powder
1/2 tsp turmeric powder (haldi, manjal podi)
Unrefined salt to taste
2 tbsp fresh yogurt
1/2 tsp dried mango powder (amchur, ularntha mangai)
Method
Heat a broad pan
Add mustard seeds, fenugreek seeds, nigella seeds, cloves, cardamom, cinnamon, bay leaf and asafoetida
Saute for 10 seconds
Add tomatoes, chili powder, coriander-cumin powder and turmeric powder and cook for 1-2 minutes on medium flame
Add the pumpkins
Add 3/4 cup water and mix well
Cover and cook on low flame for 6-8 minutes until the pumpkin is almost done
Stir occasionally
Add yogurt and dried mango powder
Mix well
Cook on medium heat for 1-2 minutes
Remove from heat
Serve hot with red/brown/millet rice or Indian flatbreads
