Aloo Bharta (Mashed Potatoes Indian Style)

Aloo Bharta is a beloved Indian dish that celebrates the humble potato in a flavorful way. This traditional recipe involves boiling potatoes until tender, then mashing them with a blend of spices, fresh herbs, and often a touch of onions and tomatoes. Aloo Bharta

Ingredients
4 large potatoes, cubed
1 medium onion, chopped fine
2 finely chopped green chilis, adjust according to taste
1 tomato, chopped
1 tsp ginger-garlic paste
1 tsp cumin powder (jeera powder, jeeraga podi)
1 tsp coriander powder (dhania powder, kothamalli podi)
1/2 tsp turmeric powder (haldi, manjal podi)
1/2 tsp red chili powder (adjust to taste)
Unrefined salt to taste
1/2 cup fresh coriander leaves, chopped
1 tbsp lime juice (optional)
Method
Place the cubed potatoes in a pot and cover with water
Add a pinch of salt and bring to a boil
Reduce heat and simmer till the potatoes are tender (about 15-20;minutes)
Drain and let it cool slightly
Mash the potatoes using a masher or fork
Set aside
Heat a wok and add cumin seeds
When they begin to splutter, add onions and green chilis
Saute until the onions are golden brown
Stir-in ginger-garlic paste and cook for another minute
Add the tomatoes and cook till they are soft
Stir-in cumin, coriander, turmeric and chilli powders and salt
Add mashed potatoes and mix well
Cook for 5-7 minutes till the flavours are well combined
Adjust seasoning, if required
Stir-in coriander leaves and lime juice (if using)
Serve hot with steamed rice or Indian flatbreads
