Ingredients
2 cups ash gourd (Kumblanga), peeled and cubed
1/2 cup grated coconut
1 cup plant based yogurt (preferably sour)
2-3 green chilis, slit
1/2 tsp turmeric powder (haldi, manjal podi)
Unrefined salt to taste
To Temper
1 tsp mustard seeds (sarson, kadugu)
1 sprig curry leaves
2-3 dried red chil
Method
Boil the ash gourd cubes in a pan with enough water to cover them, adding turmeric powder and salt
Cook till the ash gourd becomes tender but not mushy
Drain and set aside
Grind the grated coconut with a little water to make a smooth paste
Whisk the yogurt till it becomes smooth
Add the coconut paste and mix well to combine
Adjust to a pouring consistency by adding water
Heat the cooked ash gourd in a pan and add the coconut yoghurt mixture
Stir well and cook on low flame for a few minutes until the flavours blend
(Do not boil vigorously lest the yogurt curdles)
Heat a wok and add mustard seeds
When they begin to splutter, add curry leaves and dried red chilis
Sauté for a few seconds till fragrant
Add this to the pulissery and mix gently
Remove from flame and serve warm with rice
