Delicious WFPB Raw Mango Soup Recipe with Red Peppers

The Indian summer is harsh and unrelenting. It saps your energy so that you don’t want to even move from your chair. Of course, some little things compensate. Mangoes are one of them. Sweet and luscious, they are an absolute delight. But my post today is a raw mango soup. There is a reason why I chose this. The temptation with ripe mangoes is to peel. Then it would not be WFPB anymore. Also, Indians do eat raw mangoes, accompanied with salt and chili powder. So, it is not an alien concept. IN summer, anything cold is refreshing. so, on to the recipe!

Ingredients
1 cup raw mangoes, chopped
1/2 cup chopped red peppers ( jalapenos)
1 tsp grated ginger
Unrefined salt to taste
1 tbsp lemon juice
Method
Transfer all the ingredients to a blender
Add required quantity of water to get your desired consistency
Blend well
Then transfer to a soup bowl
Garnish with pieces or strips of raw mango
Serve chilled
