Indian summer can be harsh and unrelenting. The sun saps your energy so that you will not even have the energy to move from your chair. But there are little compensations. Mangoes are one of them. Sweet and luscious, these fruits are an absolute delight. So, why did I choose a raw mango soup? There is a tendency to peel the ripe mango. Then, it won’t be WFPB anymore! Indians have a habit of eating raw mangoes with salt and chili powder. So, it is not an alien practice. Without further ado, let me proceed to the recipe.

Ingredients
1 cup raw mangoes, chopped
1/2 cup onions, chopped
1/2 cup chopped red bell peppers (jalapenos)
1 tsp grated ginger
Salt to taste
2 tbsp lemon juice
Method
Transfer all the ingredients to a blender
Add enough water to get a soup-like consistency
Transfer to a soup bowl
Garnish with pieces or strips of raw mango
Serve chilled
