The body, in this harsh and hot weather, craves something chilled. Salads are good, but difficult to consume given that there is a definite loss of appetite. So I decided to experiment with cold soups, with inspiration from bloggers. Each such exercise has been an unqualified success. Frankly, this is the first time I’m trying this. The best part is that these soups are easy and not time-consuming. So, without further ado, on to the recipe. Inspired by Expedia.

Ingredients
1 medium sized onion, roughly chopped
1 carrot, cubed
3 beetroot, cubed
1 potato, cubed
4 cups vegetable stock or water
Juice of 1 lime
Black pepper powder, as per taste
Unrefined salt to taste
Method
Heat a pan and add onion
Saute the onion till translucent
Add the carrot and continue to saute
Add the beetroot and continue to saute
Finally, add the potato and continue to saute
Add the vegetables stock (or water) and bring to boil
Continue to boil till the vegetables are tender
Switch off the flame
Transfer to a blender
Blend till smooth
Cool for 20 minutes
Add lime juice
Chill in the refrigerator
Serve chilled with garnishing of your choice
