Grapefruit Salad

I have never been a grapefruit lover – until I discovered this wonderful salad. Not that I dislike grapefruit. It is a difficult fruit to clean – and the taste, after all the effort, is sour. But I have often been told that it is great for diabetics. And, therefore, virtuously have it every time I find it in the market.
This is a great salad – I have served it to several friends. All of them have fallen in love with it. It can be prepared with either the red or the yellow grapefruit. It tastes equally good with both kinds. Do give it a shot!

Ingredients
1 big grapefruit
1 green chilli, chopped fine
1 clove garlic, chopped fine
Juice of 1 lemon
1/2 cup grated coconut
1 onion, chopped fine
1 tsp date paste
2 tbsp coriander leaves, chopped fine
2 tbsp peanuts, roasted
Salt to taste
Method
Clean the grapefruit and chop into small pieces
Heat a wok and roast the grated coconut
Set aside
Saute the onion
Set aside
Mix the garlic, green chilli, lemon juice and salt in a bowl
Set aside
Transfer the grapefruit to a salad bowl
Add the roasted coconut, the lime juice mixture, date paste, coriander leaves, onion and peanuts
Add salt
Toss well
Serve at room temperature
Enjoy!
