Vegetable Aval Upma (Poha, Flattened Rice Upma)

In most parts of India, flattened rice is often prepared as a quick breakfast dish. It is exceptionally popular in states like Maharashtra. In South India, it is prepared in a variety of ways, including flavouring such as tamarind, lime, sesame, peanut… Or just plain with some vegetables added. You can use any vegetables of your choice. Also vary the spices used to suit your palate. I use the red flattened rice as it is not refined unlike the white flattened rice which is prepared from refined white rice. The red flattened rice has a lot more fibre too. My post today is the plain preparation (called upma) with vegetables added.

Ingredients
1 cup flattened rice
2 small carrots, chopped fine
100 gms French beans, chopped fine
1 big onion, chopped fine
1 tbsp roasted peanuts
1/4 tsp turmeric powder (haldi, manjal podi)
3/4 tsp chilli powder
1/4 tsp coriander powder (dhania powder, kothamalli podi)
1 tbsp chopped coriander leaves
Salt to taste
For The Seasoning
3/4 tsp mustard seeds (sarson, kadugu)
1/2 tsp split black gram (urad dal, ulutham parupu)
A pinch of asafoetida (hing, perunkayam)
1 spring curry leaves
Method
Soak the flattened rice in just enough water to immerse it
Set aside
Heat a wok and add all the ingredients mentioned under seasoning
When the mustard seeds begin to splutter, add the onion
Saute till the onion is translucent
Add the carrots and French beans
Add turmeric powder, chilli powder and coriander powder
Sprinkle a little water
Mix well and cook till the vegetables are done
Add the soaked flattened rice and mix well
Cook for 2 minutes more
Add roast peanuts
Remove from flame
Garnish with chopped coriander leaves
Serve hot
